Inheriting the traditions of Edo, we have continuously preserved the taste of Tokyo Shamo,
a delicious combination of umami, firmness, and a robust richness that sings on the tongue.
In a fertile land surrounded by nature,
we dedicate our hearts to raising our Shamo chickens, watching over them and handling them with care.

Bouncing off the fertile land and dancing in the clear wind.
A taste that resonates on the palate and in the heart, a tradition from the Edo period.

Tokyo Shamo is produced in the Tama region of Tokyo, an area blessed with nature,
with our utmost priority being the health of the Shamo.
Tokyo Shamo is produced by members of the Tokyo Shamo Poultry Farmers Union,
whose mottos are “security”, “safety”, and “tastiness”.
It is widely believed that location is of supreme importance when it comes to poultry farming.
The rich natural environment of Tama is what nurtures the Tokyo Shamo.

The members of the union give Tokyo Shamo a special feed designated by the Tokyo Shamo Poultry Farmers Union.
This corn-based feed is the secret to the delicious flavor of Tokyo Shamo.
With the perfect balance of naturally occurring proteins,
this feed results in the outstanding flavor of the Shamo meat.

okyo Shamo is committed to production limited to the Tama region in Tokyo and will continue to support agriculture in Tokyo.
Tokyo Shamo will always be a product with a strong brand power to meet the standards of Tokyo.
Tokyo Shamo has been certified by the Tokyo Metropolitan Government as a Tokyo Regional Specialty Food.
Shops and restaurants that use Tokyo Shamo as an ingredient can be registered as vendors using Tokyo’s specialty food ingredients,
and can actively promote the product.
We hope that Tokyo Shamo will continue to be embraced locally as well as all over Tokyo.

Gonokami Seisakusho is a ramen restaurant with nine locations in Tokyo, Nagoya, and Taiwan. Their Tai Ramen with the roasted sea bream and chicken broth mixture, as well as the rich Ebi Tsukemen (shrimp dipping noodles) and Niboshi Ramen (dried sardine ramen), have attracted many fans with their full-bodied flavors, bringing to the forefront the taste of their high-quality ingredients.

Being one of the best-known ramen shops in Tokyo, Gonokami Seisakusho has been selected as one of the “Top 100 Ramen Restaurants in Tokyo” every year since 2017 by Tabelog, the prestigious Japanese restaurant database.

Mr. Ito is a great chef who creates value-added ramen dishes with surplus or nonstandard ingredients, approaching food loss and waste in our food system.
“Tai Ramen” and “Ebi Tsukemen” are also new, high-quality dishes produced with surplus seafood from our seafood industry.
They are not “Recycled” but “Upcycled” cuisine, value-added and nutritious, with surplus or nonstandard foods that otherwise would not have gone to food system consumption.
Mr. Ito is a skilled chef who creates “Upcycled Ramen,” with his expertise in elevating high-quality dishes with Upcycled ingredients.

The Tokyo Shamo Poultry Farmers Union has teamed up with Mr. Masahiro Ito of Gonokami Seisakusho to develop the Tokyo Shamo Ramen.

Created in Akiruno in the Tama region of Tokyo, home of the Tokyo Shamo, this ramen will have people fully enjoying the taste of this locally-grown chicken. Moreover, by using Akiruno’s locally-grown produce as ramen ingredients, it will surely have people appreciating Akiruno even more. We hope that ramen fans from not only Japan but all over the world will enjoy the Tokyo Shamo Ramen.
